3-Course Summer Menu at bluEmber

Not only are we fortunate enough to now have four world-class resorts within the city walls of Rancho Mirage—each of them boasts a stellar signature fine dining restaurant. One of my most favorite things to do during the summer months in the Palm Springs Valley is to eat out al fresco, a little later than usual, when the hot day’s temps have cooled and the evening climate is ideal.

Just the other night my great pal Greta was in from New York City for a few days. I took her to bluEmber at Omni Rancho Las Palmas (on Bob Hope Drive, across from The River) so we could sample Chef de Cuisine Brandon Testi’s new three-course summer menu—a sheer steal at just $29 per person.

While I started with the Fattoush (a salad of romaine, heirloom tomato, crumbled feta, kalamata olives, fresh herbs, and red onion in a preserved lemon vinaigrette), Greta began with the Chilled Snap Pea Soup (with lump crab meat and black pepper crème fraîche). My friend then segued to the Grilled Prime Flat Iron Steak with crushed red bliss potato, California asparagus, and rosemary/tomato compound butter, as I indulged in the chef’s inspiration of the day: a Szechuan pepper-spiced New York strip with sour cream mashed potatoes, broccollini, and a Bourbon demi-glace. Our sweet finish was to share the Strawberry Shortcake alongside Testi’s ode to the Reese’s Peanut Butter Cup (a mousse cake, homemade gelato, and other fine sucreries bursting with those famous familiar flavors).

Of course, I haven’t mentioned the third option in each of the starter, entrée, and dessert categories—or Testi’s extensive full menu, which is also on offer. I’ll just have to return solo to savor everything else.
